In the core of Valpolicella Classica, the Cesari winery in Fumane hosts the processes of appassimento (grape drying), pressing, and fermentation, merging tradition and research.

With its multi-level architecture nestled at the foot of the Lessini Mountains, the Fumane winery enhances the surrounding landscapes, integrating seamlessly with the territory.

In Fumane, our grapes begin their journey, nurtured with care during their transformation into Cesari wines.

Cesari Grape Drying Loft

The pride and joy of the winery is the fruttaio (drying loft), a true temple of appassimento dedicated to the care of our grapes.

Inside, amidst the aromas and energy of a slow transformation, over 55,000 selected crates of grapes rest under constant temperature and humidity control, until they are ready to reach the wine cellar.

The Bosan Caveau

In the heart of our Cesari winery in Fumane, we treasure the soul of our Amarone Bosan.

The Bosan Vault contains over ten thousand bottles of Amarone, a treasure and historical memory of our winery from the 1997 to 2015 vintages. A place suspended in time, it hosts unforgettable experiences and vertical tastings. Here, every bottle expresses the story, passion, and personality of Amarone Bosan.
