Custom-designed for the refinement processes in barriques and tonneaux, the Cavaion Veronese cellar allows our wines intended for long ageing to develop the typical character of Valpolicella, with a contemporary touch.

The Barrel Room
In the Cesari Barrel Room, the character of our wine is carefully shaped. Time and oak work in harmony under perfect temperature and humidity, giving balance, softness, and ideal tannin extraction.
With over 590 barriques, 125 tonneaux, and 95 casks, for the barrel room we chose French oak for the small formats and Slavonian oak to enhance structure and complexity in the larger casks.
