Soave Classico: The Elegance of Venetian Volcanic Winesย

When discussing Veronaโ€™s winemaking heritage, attention naturally shifts northwest toward Valpolicella. Yet, there are other regions of great interest capable of expressing themselves through noble wines with a deep history. Today, we focus on the Soave Classico denominationโ€”a territory where geological profile, time, and human dedication have come together to create refined wines that stand far above passing trends.

Soave Classico: From Roman History to Volcanic Soils

The area designated as “Classico” within the Soave DOC (established in 1968) marks the historical and original zone of the denominationโ€”specifically nestled among the hills of the Monteforte dโ€™Alpone and Soave municipalities. Here, viticulture roots itself in a millennial history dating back to Roman times.

According to historical records, as early as the 5th century AD, Cassiodorusโ€”minister to King Theodoricโ€”praised the white wines of the area, describing them as having a beautiful purity that seems born of a white lily.”ย 

However, the true secret of what would eventually become known as Soave Classico lies beneath the surface. Unlike the predominantly limestone-driven soils of the surrounding wine regions, the heart of the Soave Classico zone is defined by a volcanic matrix. The local geological history is the result of a transformation that began over 90 million years ago, originating from an ancient seabed shaped by underwater eruptions and lava flows.

Today, this heritage translates into dark soils rich in basalt and limestone outcrops. For the vines, this soil is both a challenge and an incredible resource: it forces the roots deep in search of nutrients, infusing the grapes with traits that emerge in the glass as a pleasant acidity, verticality, and a near-saline stretchโ€”the unmistakable signature style of volcanic wines.

The Garganega Grape: Structure and Elegance

The primary native grape of Soave is Garganega, the backbone of the denomination, which by regulation must make up a minimum of 70% of the blend.

Garganega is not an aromatic variety in the strictest sense; it does not chase immediate olfactory impact or primary note exuberance on the nose. Instead, it is an understated variety that builds its complexity through ripening.

This grape variety has a thick, leathery skinโ€”with colors shifting from gold to amber at full phenolic ripenessโ€”a characteristic that protects the bunch and helps preserve its signature acidity even in the warmest vintages.

Soave Classico โ€œTremenaltoโ€ Cesari

While Cesari’s history is deeply rooted in Valpolicella Classica, our winery has always looked beyond these bordersโ€”venturing toward Lake Garda, for instanceโ€”to express the diverse facets of the Veneto region.

Thus, Soave Classico DOC Tremenalto: was born: out of a desire to bring this unique, neighboring terroir into the glass. Cesariโ€™s Soave Classico is crafted from 100% Garganega grapes grown in the hillside area of Tremenalto. This toponym historically derives from the fusion of the words โ€œtermineโ€ (boundary), indicating the geographic border between the municipalities of Monteforte dโ€™Alpone and Montecchia di Crosara, and โ€œaltoโ€ (high), referencing the hillside nature of the site.

The grapes undergo a classic white vinification process, followed by must fermentation with selected yeasts at a controlled temperature of 16ยฐC.

At the eye, Soave Classico โ€œTremenaltoโ€ Cesari shows a bright straw-yellow color with greenish highlights. On the nose, it opens with a persistent bouquet of ripe fruit and hawthorn, while the palate is dry, delicate, beautifully structured, and finishes with excellent persistence.
